Ethiopia Hunda Oli

Product Description

This coffee is produced by 128 smallholder farmers belonging to Hunda Oli, a new cooperative located in the forests of Agaro, in the Oromia region of Western Ethiopia.
Until recently, many coffees from this region were often natual processed and unsorted for density or defects and because of this, the coffee could only command a modest price, and there was much untapped potential for cup quality.
With the assistance of Technoserve, the farmers now have been able to leverage the coffee’s potential and they are now producing stunning lots that we think can easily compete with the quality of some of the most delicious coffees from neighboring regions – Yirgacheffe and Sidamo.
Farmers deliver coffee cherries to one of the cooperative’s collection points. Many members feel positively about this, because previously all they could do was walk a long distance to the nearest middleman who typically is in a position of power to offer an arbitrary price most often of benefit to the middleman and not the farmer.
After the washing station purchases the cherry, it is pulped within 4-8 hours. It is then soaked in water overnight before being washed again in the morning and put onto shade covered drying  tables. Then, the coffee is sorted for defects and transferred to the final drying table for 1-2 weeks until target moisture is reached.
Complex floral aroma and silky texture, with sweet flavors of apricot and wildflower honey.

For all types of filter coffee brewing, we recommend the following parameters:
Brewing ratio: 1 g coffee – 16 g water
Slurry temperature (coffee+water): 195-200° F
Extraction: 19.5-20.5%
